  • How do I add a new FAQ question?

  • What is the best way to store live oysters and clams?
    For best shelflife, make sure there are no drastic temperature changes until you are ready to shuck them. Dry store your oysters in your refrigerator in a large bowl or casserole tray with a damp bar towel over the top. Never freeze them. Never emerse them in water. Rinsing them under a flowing stream of water is fine for cleaning.
  • Raw oysters on the halfshell = Alive or Dead?
    Live! It is important that the oyster is healthy and alive when eaten because oysters are not pasteurized, they are alive and therefore enzymatic and beneficial. When eating raw oysters: SMELL the oyster FIRST before adding anything on it. It SHOULD NOT smell anything like a hard-boiled-egg... It should smell FRESH LIKE THE OCEAN. If it smells anything like a hard-boiled-egg, do not eat it and throw it away.
