Recognized as the most unique boutique oyster farm in North America, Blue Island Oyster Farm is strategically located near the Fire Island Inlet in the Great South Bay. The oyster farm's proximity to the Atlantic Ocean makes for an ideal location for raising our signature Blue Island Oysters. Spend a day at the farm and we promise you will never look at oysters the same way again.
The hatchery at Blue Island Oysters is where all the cool science stuff happens. Chefs, food writers, and oyster enthusiasts from around the world have come to our facility in West Sayville, New York to witness first hand how oyster seeds are produced. Visitors to the hatchery and nursery learn how male and female oysters spawn, how free-swimming larvae set on ground oyster shells and even observe baby oysters under a microscope. Seawater and sunshine are all we need to produce millions and millions of baby
oysters.

FOR WILD LONG ISLAND OYSTERS
Blue Island Oysters was founded by Long Island oyster diver Chris Quartuccio in 1995. Chris would dive for wild oysters in the early mornings and deliver them to Manhattan restaurants later that afternoon. The Long Island Sound has several wild oyster reefs that are sustainably harvested on a year-round basis. Long Island oyster divers are a unique breed of rugged individuals.

In addition to shipping and delivering our own products to our customers, we are directly partnered with over 100 product producers from all over the world to deliver their products direct to restaurants in New York, Southern California, Las Vegas & Miami as well. We are testing this new concept of delivering direct to consumers at their home or office here in Southern California. As we develop this flagship concept we will continue to add 100s of live shellfish products to the roster and expect to broaden our delivery options.
